AZTEC — A restaurant that once offered chicken is now the newest place to buy a burrito.

The Habanero Grill opened for business on Friday at 910 NE Aztec Blvd., the former location of the Chubby Chicken, which closed in May.

"We're excited," said Lisa Higgins, who owns the Habanero Grill with her husband, Nick.

The grill is not new to the Farmington area and has been serving people an array of burritos, quesadillas and sandwiches at their location in Farmington at 2834 E. Main St., inside the gas station there.

"We have over 70 items on our menu," Nick Higgins said.

He said they have 11 different breakfast burritos and hope the new Aztec location will become a favorite of oil field workers.

"We can't open until six in the morning because that's when the gas station opens up," he said about the Farmington location.

As a result, the couple plans to open the Aztec site at 5:30 a.m. every day and close at 1:30 p.m.

"We're hoping to reach more of the oil field workers in Aztec," he said.

The couple was actively looking for a new location in Bloomfield when they found out the Chubby Chicken was closing.

"That was a desirable location for us," he said.

The couple will rent the building and see how business performs. Then, if results are favorable, they plan to make an offer to buy it.

"Hopefully, (the new location) will pick up and do well," he said.

He said the Farmington restaurant sells about 100 burritos a day.

Lisa Higgins said they weren't completely ready to open the new location, but due to demand, they decided to open and have a formal grand opening later on this week.

"We haven't made the announcement yet," she said.

The couple hasn't given up the idea of expanding into Bloomfield either, Nick Higgins said.

"We'll see how this goes and we'll think about Bloomfield," he said.

Nick said they plan to hire as many as three new workers at the new location.

"It's hard job," he said, "When you get busy, man, I tell you, you work your butt off."

Regardless, the couple is excited about the new restaurant.

"We're definitely excited and just ready to roll with it," Lisa Higgins said.
